Welcome to May!
 
Well, April did a fine job of showering us with much needed rain as it is bringing everything back to life, giving us another chance to enjoy our surroundings. From what I hear, some of you took advantage of tackling some home renovations as there is a shortage of lumber. And, if this last year has shown me anything, it's how much more time we seem to have to find things to fix or update, right?

So much so, I've found myself walking through my home saying things like, "I should paint the walls", and "I should change my kitchen cabinets" and "I should add interlock to my front porch." Then I stop in my tracks because nothing is worse than starting a project that leads me to a path of an empty wallet. I might as well confess now because you'll read about it below - yes, I added interlock to my front porch and I won't tell you what I did to the backyard...just scroll down!!

Since I'm entertaining the notion that we should change things up, did you notice the NEW Fleming logo? See how I changed the subject there? LOL - On a serious note, I'd love to hear your feedback on the new logo - TIA!!

And finally, remember to celebrate each day like it's a new one!

How Much Can You afford?
 
Homeownership can be very exciting, but it isn’t always the best thing for everyone. Before you decide to buy a home, make sure you carefully consider the costs.

According to Canada Mortgage and Housing Corporation (CMHC), your monthly housing costs should not be more than about 35% of your gross monthly income. This includes costs such as mortgage payments and utilities.

Your entire monthly debt load should not be more than 42% of your gross monthly income. This includes your mortgage payments and all your other debts.

In honor of National Barbecue Month!

INGREDIENTS

  • 2 boneless skinless chicken breast halves (6 ounces each)
  • 1/4 teaspoon pepper
  • 1 cup barbecue sauce, divided
  • 1 tube (13.8 ounces) refrigerated pizza crust
  • 2 teaspoons olive oil
  • 2 cups shredded Gouda cheese
  • 1 small red onion, halved and thinly sliced
  • 1/4 cup minced fresh cilantro

INSTRUCTIONS

  1. Sprinkle chicken with pepper; place on an oiled grill rack over medium heat. Grill, covered, until a thermometer reads 165°, 5-7 minutes per side, basting frequently with 1/2 cup barbecue sauce during the last 4 minutes. Cool slightly. Cut into cubes.
     
  2. Divide dough in half. On a well-greased large sheet of heavy-duty foil, press each portion of dough into a 10x8-in. rectangle; brush lightly with oil. Invert dough onto grill rack; peel off foil. Grill, covered, over medium heat until bottom is lightly browned, 1-2 minutes.
     
  3. Remove from grill. Spread grilled sides with remaining barbecue sauce. Top with cheese, chicken and onion. Grill, covered, until bottom is lightly browned and cheese is melted, 2-3 minutes. Sprinkle with cilantro.
