This month, I'd like to introduce Rose Ficco, who is my Administrative Specialist and she also makes the delicious Fiscotti cookies you have received in the past. Her story is so inspiring as she created a business opportunity when she was in a negative situation, not once, but twice! Here's her story...
Rose's baking journey started in 2016 and at the time, it was just something to pass the time as she transitioned from working 9 to 5 for a variety of non-profit organizations over 20 years to taking a chance on running a business of her own. Who knew a job loss would lead her to create two businesses.
Her primary business is Rose to the Rescue, where she works with small businesses (like me) that need a rescue with their administrative tasks like website editing, blogging, marketing campaigns, client management and so much more.
The fiscotti cookies really came out of feeling nostalgic. In fact, baking was not something Rose was good at. If her mom was alive, she would tell you that Rose wasn't a big fan of following baking recipes.
But one day, Rose called her aunt and asked if she would share a recipe for the Italian Anise biscotti as she used to bake them for family functions over the Christmas holidays. Rose's mom used to make them too, but she passed away sixteen years ago, making Rose miss these cookies even more because when she ate them, it would remind her of the good old days.
Well, the anise cookies, now known as Nonna's Fiscotti (Anise, Almonds & Sambuca liqueur) was the first flavor, and since then, Rose has come up with a variety of flavors as she promotes monthly themed cookies like:
Naughty Fiscotti - Chocolate, Salted Caramel, Skor pieces and Pretzels
Fiscotti Joy - Chocolate, Shredded Coconut & Almond Slivers
Fiscotti Amore - Chocolate, Marshmallow & Graham Crackers (only available in the summer)
Fiscotti Harvest - Pumpkin Spice & Seeds (newest monthly flavor)
Many have asked why the name "fiscotti" and not "biscotti" - well, it's simple. Rose's last name starts with an F so she thought she would change it up a bit...
