Happy November!

As we wind down to the second last month of the year, I reflect on how different this year was with everything going on. We have all had our own challenges and some of you might even agree, that some changes were actually necessary like being able to work from home while being with your family, sure sometime chaotic, but you shared moments that you wouldn't have pre COVID. It's like we were on auto pilot for so long that we didn't notice there were things we were missing out on!! 

Challenges can come into our lives at any moment, it's up to us how we handle it and since this month is 'National Gratitude Month' and November 13 is 'World Kindness Day', I think we should thrive on these two things as it makes the world such a better place.

So on that note, this month I will continue to share a few more celebratory dates as you might need a pick-me-up.

This month, I'd like to introduce Brenda Alderdice, owner of Downsizing Diva in Caledon-Dufferin.

Everyone deserves a positive beginning when they are facing a new phase in life. I discovered a special fondness for helping seniors move when I downsized and relocated my father so he would be closer to me. The experience was a huge wake up call. It helped me recognize the need for personalized, caring service during times of transition.

With my children grown, being a Downsizing Diva was my opportunity to devote my time and expertise to helping seniors downsize and relocate, and make their transition as stress-free as possible.

My first career as health care professional where I cared for at-risk children and adolescents prepared me well for this line of work. I’ve also always had a passion for community work, volunteering at my children's schools and various local organizations.

Described by my friends and colleagues as a go-getter, dedicated, and loving, I treat me clients as family, assisting them through a difficult time with compassion, care and flawless attention to detail.

With training in all aspects of senior move management, senior relocation services and elder care resources, I consider myself a specialist in downsizing and moving seniors. I’m also proud to be one of the first franchisees and owner of Downsizing Diva.

You may actively participate in social programs, too, which may give your internal satisfaction. But better to postpone any plans for the acquisition of properties, as this may create some issues or drag on unreasonably. Your health should be good.

Ingredients:

  • 3 tablespoons extra-virgin olive oil, plus more for drizzling
  • 2 scallions, sliced (white and green parts separated)
  • 2 tablespoons chopped peeled fresh ginger
  • 2 cloves garlic, smashed
  • 5 carrots, chopped
  • Kosher salt and freshly ground pepper
  • 1 14-ounce can light coconut milk
  • 1 15-ounce can cannellini beans, undrained
  • 1/2 acorn squash, seeded and chopped into 3/4-inch pieces
  • 3 cups roughly chopped broccoli florets and tender stems (about 1 head)
  • 2 slices crusty bread, cut into 1-inch pieces, plus more bread for serving

Directions:
Preheat the oven to 450 degrees F. Heat 1 tablespoon olive oil in a large wide pot or Dutch oven over medium-high heat. Add the scallion whites, ginger and garlic and cook, stirring occasionally, until softened, about 2 minutes. Stir in the carrots and season generously with salt and pepper. Add the coconut milk, beans with their liquid and 3 cups water. Cover and bring to a boil over high heat. Uncover and cook, stirring occasionally, until the carrots are very tender, 18 to 20 minutes.

Meanwhile, toss the squash, broccoli and bread with the remaining 2 tablespoons olive oil and 1/4 teaspoon each salt and pepper on a rimmed baking sheet. Roast, stirring, until the vegetables are tender and browned and the bread is toasted, about 15 minutes.

Puree the soup with an immersion blender (or transfer to a regular blender in batches and puree); season with salt and pepper. Divide the soup among bowls. Drizzle with olive oil and top with the vegetable-crouton mixture and scallion greens. Serve with bread.
