New season: Spinach
Most people only know spinach as an iron-rich vegetable, but it is packed with other minerals and vitamins, which makes it real superfood!
Spinach contains more iron (3-4 mg) than many other vegetables, but the iron content of spinach has long been overrated (partly thanks to Popeye).
Because chemist Erich von Wolf misplaced the decimal in his research in 1870, a serving of 100g of spinach did not get the right 3.5 milligrams of iron, but 35 milligrams. Oopsie!
